- Dinner will be served in 90-minute shifts.
- You cannot choose between the buffet or the Echigo Yuzawa Onsen Japanese-Western Kaiseki "Taste of the Countryside".
- On certain dates (Golden Week in May, Marine Day in July, Obon in August, long weekends in September, and the autumn foliage season in October and November), meals will be served buffet style.

For dinner, we serve Uonuma-grown Koshihikari rice in a pot.
Our hotel serves Uonuma Koshihikari rice directly from Seki Farm! It has won the gold medal at the Rice Taste Analysis and Appraisal Competition (International Competition) for six consecutive years and holds the Guinness World Record for "World's Best Rice (Raw Material Certified)" for four consecutive years.

The Sea of Japan side is a treasure trove of seafood! Nodoguro is a white-fleshed fish also known as akamutsu.
Because the back of its throat is black as if painted with ink, it is more commonly known as "nodoguro" in Niigata than as "akamutsu."
The sashimi, rich in fat, is truly the "fatty tuna of white fish." When grilled with salt or simmered, when you gently break open the light red skin, the exquisite flesh immediately flakes apart, and the fat spills out, allowing you to savor the flavor.

We will provide each customer with a whole snow crab, the king of delicacies from the Sea of Japan.

Salt-grilled sweetfish
The Uonogawa River, a clear stream near Echigo Yuzawa Onsen, is famous for ayu (sweetfish) fishing. The ayu are caught in the upper reaches of the river in Yuzawa and the Ishiuchi area. Please enjoy the salt-grilled ayu raised in the clear waters of the Uonogawa River basin.
This ayu (sweetfish) is grilled to perfection, crispy and fragrant on the outside and fluffy on the inside. It's a popular special order dish that pairs perfectly with alcoholic beverages.
*Natural sweetfish are only available from late July to mid-September; frozen sweetfish will be used at other times of the year.
